It’s hot. And you’re hungry. So what better way to celebrate summer than make these delicious light summer recipes? Perfect for any picnics, get-togethers, barbecues, etc.

These recipes are all from bloggers I know on Twitter, and I’m happy to bring some attention to their wonderful blogs! So, go check out their recipes, and maybe you’ll find a favorite. ( ´∀`)

For this post, the recipes are organized into 3 parts: drinks, appetizers/sides, main course, and dessert.

Summer Recipe 1: Sweet Kiwi Lemonade by Lynn Mumbling Meija

By Lynn from Lynn Mumbling Meija

This first recipe is by one of my favorite bloggers, Lynn! It’s super easy to make, with a few ingredients and minimal equipment. If like me, you’re not a big fan of Kiwi, she has substitutes. Which is one of the things I love about her recipes. As for this recipe, Lynn has some tips and alterations, so go check it out!

A perfect drink for a hot day, get-togethers, or summer birthday parties. (^O^;)

Summer Recipe 2: Refreshing Spring Pasta Salad by Lynn Mumbling Meija

Another recipe by Lynn, but this falls into the appetizer-lunch section. You’ve never seen a more colorful plate, with veggies that I *actually* like and of course pasta. If you don’t like something or you’re allergic to something in the recipe, it’s completely fine to leave it or sub it out. And it only takes 25(+ pasta cooking time) minutes to prep. Lynn also has a video on how to make it, linked in her post.

Summer Recipe 3: Citrus Summer Salad by Abundance of Flavor

Who said salads just had to be leafy greens? Spice up the place with this citrus salad. I never knew there were so many citrus fruits, but you learn something new every day!

Go to your grocery store pick up these ingredients and make this summery citrus salad. If you’re a bigger fan of tart fruits, this recipe is for you!

Summer Recipe 4: Mango and Avocado Salsa by Pennies Into Pounds

I love both mangoes and avocados, so imagine my surprise when I saw this recipe. This dish also calls for chicken and rice, but you can sub the chicken for vegetarian/vegan options like falafel. Avocado is fat, chicken is protein, Mango is vitamins, and rice is the carbs!

I may be making this for lunch soon, so I’ll let my followers know on Twitter if I try it!

Summer Recipe 5: Tex Mex Hotdogs by AwesomismMom

This recipe is by a recent blogging friend I made, AwesomismMom. She’s so sweet, and I’ve recently guest-posted about self-care on her blog.

This post, however, is on the White Bulls BBQ website and calls for some pretty basic ingredients. To be clear, you’re not making sausages from scratch but adding the Tex-Mex flavor. Lynne explains it more in the post, so if you want a Tex-Mex version of Chicago Dog, this is the recipe for you!

Summer Recipe 6: Baked Maple Mustard Chicken Wings by Lynn Mumbling Meija

I love chicken wings, but I would rather make my own so they’re healthier. The ingredients are pretty standard pantry items, and you don’t need a lot of appliances. It is a win-win, the last thing I want to do after cooking is clean many pots/pans.

Bring these to a picnic or potluck, and you can pair them with salads and/or fries. I swear these will be the hit of the party.

Summer Recipe 7: No-Bake Summer Berry Cheesecake by A Spoonful of Vanilla

Mmm, now we’re talking about my favorite part, dessert. ?

So, it’s Summer, you’re already burning. Baking and warm brownies are more of a fall-winter thing.

6 delicious fall recipes that are guaranteed to make you want to bake immediately.

Just in case it is fall, you might like ⤴

All you want now is something cool, and light. Well, that’s where this no-bake berry cheesecake comes in. Come on, no hot oven needed, cheesecake, and it’s fruity?? I’m about to stop writing and start making cheesecake. ?

If you want something summery, tasty, and light for your BBQ, picnic, potluck, party, etc. This is THE dessert.

Summer Recipe 8: Vegan Biscoff Tart by Sarah on A Spoonful of Vanilla

This dessert alternative is for my vegan readers, Biscoff lovers(me!), and cheesecake haters. (you’re on thin ice). This dish only needs 5 ingredients, which is great if you’re low on time. When I look at dessert recipes, they have 8+ ingredients and I usually don’t have half of them on hand. The instructions are a bit long, so make sure to read through them carefully. Often I just scan the directions and then hit an obstacle mid-way. Don’t be like me guys. ?

Summer Recipe 9: Charcuterie Boards

I absolutely love charcuterie boards, and if I see it at any party or event I am right next to it munching. You’re just in luck if you’re looking for the best charcuterie boards. I’ve recently tried an olive wood cutting board from Forest Decor and it was so beautiful and well made. And their charcuterie boards are just as great quality, maybe even better. You can buy directly from there here. They have such a wide variety and what is a charcuterie layout without a magnificent board alongside?

Conclude

Summer is here, so get ready for the heat with these great recipes. Let me know if you’ve tried any of these on Twitter!

I know I haven’t been consistent in posting, as I’ve had my plate full of other priorities. I’m slowly going back into my blogging schedule, and I have some more guest posts going out. What have you guys been doing the last month or so? Tell me in the comments, plus your favorite Summer recipe!

Till next time,

take care.
