You’ve heard of the TikTok sensation, pesto egg recipe in the hole, but here’s a variation of it. What if you want the yolk cooked? Or you just don’t like buying different bread and having to make it thick enough so it doesn’t become soggy. Or having to cut out a circle in the bread every time? Then this pesto egg recipe is for you!
The reason I made this variation is because my bread wasn’t thick enough to cut a hole in and also support the egg. So I was like what if I added the pesto to the egg directly and cooked it in the pesto’s oil? Sounds a bit gross, not going to lie. However, it did turn out well, one thing to watch out for is the salt.
I recently experimented with this for Father’s Day and it was a hit! I tried it a couple more times so I can perfect the recipe for you guys! All you need for this pesto egg recipe is:
- 2 eggs
- 1 tsp salt
- 2- tbsps of pesto
optional
- bread
- oregano
- 2 tbsp milk
- salt to taste(1-2 tsp)
Here are the steps:
Get The Egg Batter Ready To Go
The egg batter for the pesto egg recipe is just your usual one, here’s what I put into it.
- 2 eggs
- 2 tbsps milk
- oregano
- salt to taste(1-2 tsp)
- red chili pepper flakes
And then I whisk these all together.
Pesto Egg Recipe Step #1: Heat the pan + Pesto
When the pan is heated on medium-low, add the pesto. Give it a mix so it settles, and the oil starts releasing.
Step #2: Pour the egg
Then either melt butter or pour a tbsp of cooking oil into the pan, after medium heat. Then when it’s hot after a few minutes, add the egg batter.
Step #3: Whisk it
Then using a fork, I gently whisk the egg and pesto together. I don’t want them becoming completely blended just slightly mixed. This way your pesto egg cooks better.
Step #4: Cook & Cover
Now, wait a bit as the egg cooks(you don’t want to eat anything raw). If you want to cover the pan with a lid go ahead, just ensure your egg cooks all the way.
Optional Variation to the Variation
If you want to serve your egg over toasted bread, be my guest. It’s more filling and is healthy(especially if you use whole wheat grain). If want something else to add, you can always follow my recipe for Avocado Toast!
You can also add it over a tortilla and make it a burrito or an egg quesadilla. Adding this to your lunch or dinner for extra protein also works. You can even bring this to work and cook it ahead of time, store it, pack it, and then eat it.
Conclude
This is a short post, but I hope you enjoy this pesto egg recipe. I love making pesto eggs for breakfast, and it’s super yummy. Eating healthy doesn’t have to be bland. You can always add meat, like cooked ham, sausages, bacon strips, etc. If you don’t like meat, then cooked/fried potatoes are also a great option.
Maybe some green onions on top or Italian seasoning would improve the egg based on your tastes.
This is extremely filling, and a great way to get protein in the mornings. And it kind of removes the egg aftertaste that many people hate(me included). To be honest I love using TikTok to find new recipes,
